Tasting notes: it has a clear xanthic colour with greenish hues. Its fruity and flowery bouquet is intense and steadfast.
The fragrance of acacia flowers is especially distinct.
It has a fine, intense and lasting flavour. It is dry, freshly tart, alcoholically warming, full bodied, soft and well balanced with a pleasant cool though slightly bitter aftertaste.
Gastronomic notes: it complements raw shellfish, vegetable gateaux and delicate soup. Excellent with fried stuffed olives, a specialty from Ascoli cuisine.
